BREAD!

I did it! I made a Paleo bread! It is soooo good! The kids had some with peanut butter on it I know pb isn’t Paleo . Eventually we are going to make the switch to almond butter…someday. 🙂
I ate it with butter slathered all over it. The next thing I want to try is using it to make garlic bread!

This bread doesn’t rise and wouldn’t be good for making huge sandwiches but it gets the job done!

“Better Than Bread” Bread 🙂

6 eggs
1/2 cup melted butter
1 TBS honey
1/2 tsp salt
3/4 cup coconut flour

Mix together and press down into a loaf pan. Bake for 35-40 min or until slightly browned.


Cheesy Baked Tomatoes

Ok all you tomato lovers out there, this recipe is for you! 4 out of the 6 of us love tomatoes so this was a big hit! I can’t wait until the summer when you can get big, red, juicy tomatoes at the farmer’s market! Also, this will be the second year in a row we have had a garden. I guess I should say Clayton has a garden. I was pregnant last year and wanted nothing to do with the garden. Lets just say my motherly instincts did not extend to the plot of weeds growing in the backyard. Please do not ask my husband if I am a pleasant pregnant person, he will surely not tell the truth……

This recipe is inspired by a pic I pinned on pinterest. Of course I didn’t actually use the original recipe because…..ummmmm….because I never do. 🙂 This drives Clayton crazy because I can never make the same thing twice, hence this blog to keep track of recipes!

Ingredients
tomatoes cut into 1/2 inch slices
Shredded cheese- any kind you want! I used Parmesan and a mixed Italian blend.
chopped fresh basil or dried basil
chopped fresh oregano or dried oregano
Salt
pepper 

Instructions
Preheat oven to 450° F.
Place tomatoes on a baking sheet.
Top with cheese, sprinkle with basil, salt and pepper. Drizzle each tomato with butter.
Bake until the tomatoes are tender and cheese is browned, about 10-15 min.

I forgot to get a pic when they were done. But they were beautiful, for a tomato.

Food Pics

This is the Caribbean Jerk Rib recipe that I posted here from PaleOMG.

This is a sweet potato pie from Paleo Comfort Foods. Great cookbook. You can get it on amazon. The book not the pie.

These are Kale Chips.

Ingredients
1 bunch kale
1 tablespoon coconut oil or bacon grease
1 teaspoon seasoned salt

Directions
Preheat an oven to 350 degrees F (175 degrees C). Line a non insulated cookie sheet with parchment paper or foil.
With a knife or kitchen shears carefully remove the leaves from the thick stems and tear into bite size pieces. Wash and thoroughly dry kale with a salad spinner. Drizzle kale with oil and sprinkle with seasoning salt.
Bake until the edges brown but are not burnt, 10 to 15 minutes.

Roasted Carrots

These were so good. I told Clayton I could eat them for dessert! It was pretty simple.

Ingredients

Carrots

Some kind of fat. I have used bacon grease and coconut oil and both were good. Could also use butter.

Salt and pepper to taste

Preheat oven to 425°. Cover a baking sheet in foil. Peel carrots and cut them into even sticks (That way they will all be done about the same time.) Place carrots in a large zip lock bag. Drizzle melted oil or butter over carrots, close bag and shake you till all carrots are covered. Spread evenly on foil covered baking sheet. Salt and pepper to taste. My carrots took about 25-30 minutes to cook and I stirred (tasted and salted) them about halfway to ensure even cooking.
